Oatmeal Chocolate Chip Bars

We recently had some new neighbors move in.  That’s been happening alot since our neighborhood is brand new.  However, these neighbors were directly next door to us.  I ran into them late one evening when I was getting the mail.  Turns out their crazy work schedules had made them seem like they didn’t live there.  But they did!  After a couple more encounters I finally invited them over for dessert so we could get to know them.  Dessert is easy and low key.  Plus, it’s like “meeting for coffee.”  Short and sweet.

I had really wanted to make a cake but I had recently made a batch of oatmeal chocolate chip cookies after my sister recommended the recipe to me.  So I took the remaining dough, pressed them into a pan, and cut them into bars after they baked.


When the neighbors arrived, I cut the warm bars and served them in individual ramekins with cold ice cream on top.  An easy dessert!  And this was all stress-free.  Now that’s my kind of get-together.


Oatmeal Chocolate Chip Bars

  • 1 cup butter flavored crisco
  • 1 cup brown sugar
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups flour
  • 2 3/4 cups oatmeal
  • 2 cups chocolate chips


Step 1
In mixer, cream together crisco and sugars until creamy. Add eggs slowly one at a time. In separate bowl mix together flour, salt, baking soda, and powder. Slowly add into wet mixture. Stir in oatmeal until mixed in. Then add in chocolate chips.
Step 2
For cookies, bake at 350 for 10-12 minutes. For bars, press half the dough into an 8x8 pan and bake at 350 for 20 minutes.
